Any leftover meat that cannot be cut into specific cuts will automatically be made into ground beef and included in your order. You will be charged accordingly based on the final weight at your butcher's per-pound rate. Ask your butcher about fat percentage preferences (80/20, 85/15, 90/10) when you confirm your order.
